Huang Shan Mao Feng green tea

Green teas, the earliest form of tea, are processed without oxidation. The resulting leaves infuse to create a light and refreshing drink that should never be diluted with milk or sweetened with sugar or honey. Prized for centuries for their health benefits, green teas are becoming a most favored drink.

Chinese green teas are available in an almost infinite range of style and flavor. The top grades reflect thousands of years of refinement to what can only be considered an art form. Because Chinese greens are delicate, they should be infused with water that is below the boiling point.

All of our green tea with the exception of Gunpowder are hand picked. Hand picking is a very skilled job and increases the price of the tea. After the tea is picked it is allowed to wither. The leaves when first are stiff and need to soften for further processing; The leaves are placed on bamboo trays and placed in the sun or on racks. The tea is allowed to wither for three or four hours after until our tea master determines that the smell is just right and the it enters the next step, heating to remove moisture and prevent the leaf from oxidizing. There is many ways of doing this and some of them very complex. LongJing for example has ten different hand movements required of our tea makers.
